Martin Poland, who used to run the Central Bar in Killyleagh, entered guilty pleas to 16 charges, all committed against a single victim.
These included 14 counts of sexual assault and two of sexual assault by penetration.
Nine similar charges against the well-known 53-year-old remain on the books.
A prosecutor told Downpatrick Crown Court that Poland’s confessions "are on a full-fact basis".
When Poland was in court two weeks ago, his lawyer requested reporting restrictions due to threats made against him, arguing that media coverage could raise risks.
Interim restrictions were lifted last Friday.
Judge Crawford ordered Poland to sign the sex offenders register, with sentencing adjourned until November 28 for a pre-sentence report, and indicated he would revoke bail and remand him into custody.
The Central Bar closed during summer and is on the market.
